Chef Garrett “Rusty” Thienes and his wife, Kristy, are, in many ways, pioneers in this region of pioneers where the best cooking has for generations been found in home kitchens.
Like the marbling on their locally raised Speckle Park beef, Harvest Eatery is unique. This 45-seat, award winning restaurant creates an intimate, elevated dining experience in rural Shaunavon, SK – population 1700ish. 50km off highway one and nearly 350km from the closest international airport, Harvest knows that dining here extends beyond a delicious meal created with love and locally sourced ingredients. The experience becomes an adventure away from the Trans-Canada, across wide open prairies dotted with ranches, through yellow fields of swaying grain, over rolling hills, passed rugged badlands trickled with meandering creeks.
Harvest Eatery opened in July 2013 with the mandate of showcasing Saskatchewan’s farmers, ranchers, growers, producers and artisans, all while exemplifying what Saskatchewan ‘tastes like’ (with their own spin of course.) With a warm, welcoming atmosphere that includes a ‘theatre kitchen’ where guests can sit and interact with the Chef, Harvest is a destination – drawing foodies from all over the world for a spectacularly genuine dining experience.
With a menu inspired by classic Saskatchewan recipes (some found in Chef’s family’s handwritten cookbooks), Chef Thienes has pulled inspiration from his world travels and culinary experiences to enhance dishes using innately Saskatchewan and Canadian ingredients to make them unlike anywhere else in the world.
Perogies and Sausage? Let’s talk about hand formed perogies coloured a vibrant purple with the juice from local beets and stuffed with bright orange yam grown at Hutterite Colonies and Canadian maple syrup. Perogies are accompanied by local lamb sausage with Chef’s secret Merguez spice blend accompanied with a tart & savoury crabapple chutney (just one of the preparations and preserves that was created with the 200 lbs of crab apples their neighbours picked and delivered to them.)
Moving into their sixth year of operation, with the honour of 2018’s Saskatchewan Tourism “Service Excellence” Award under their belt, Harvest Eatery’s owners and staff have a proven track record of going above and beyond. A high-level of service and quality of food has been ingrained in the whole team. It’s a culture that they have created that has led to long term staff retention, multiple awards, and a continual increase in numbers- sales and visitors..
Harvest Eatery isn’t about what exists within their own four walls — it’s about the food whole system that exemplifies Saskatchewan and Canada. Harvest Eatery prides itself on using Saskatchewan and Canadian raised, grown and made ingredients. No award surpasses watching a guest take their first bite – when their eyes close and they savour the balance of flavours in utter ecstasy.
