Located in the Listel Hotel, on trendy Robson Street right next door to the hotel’s gastro pub, Timber and within a lovely walk to Stanley Park, forage is really taking local food to the next stage of its reality in Vancouver, a city which led the way for years in the understanding of WHY one would eat locally. Celebrating its 6th birthday at the end of 2018, forage has always been ahead of the curve.

Talented Executive Chef Welbert Choi at the helm ensures that the bounty of the region is represented well. Fostering the menu at forage has deepened his relationships with local producers. He believes that it is the responsibility of all Vancouver chefs to help build long term farming, fishing and foraging legacies in BC for generations to come by working closely with local producers.

Food for him should bring people and families together, build communities, and be a flavourful part of gatherings and celebrations. He chooses his ingredients with respect, considers the environmental impact of what he brings into the kitchen, and approaches food in a way that celebrates the whole ingredient.

The telltale signs of spring are on the menu the second they come in the kitchen door- think fiddleheads in butter, pickled hop shoots, and asparagus with a soft poached egg. Summer is when you’ll see delicious gin-soaked blueberries with the cheese puff dessert, heirloom tomatoes on Glorious Organics green salad and other summer staples from farms around the lower mainland. This is when the kitchen is a hive of activity; preserving those staples for the winter months. Fall and winter we look to what they’d been fermenting, what they’ve preserved. They showcase comfort foods like quince, roasted root veggies, foraged & cultivated mushrooms with caraway rye toast and Okanagan goat cheese, squashes, kale salad with brie & apples dressing. You’ll see these same seasonal ingredients reflected in the cocktails created up at the bar. Forage also has a 100% BC wine list and throughout the summer routinely buys produce from the University of British Columbia’s Farm.
