Windjammer Restaurant, Delta Beauséjour, Moncton, New Brunswick

Located in the heart of New Brunswick, Chef Stefan Müller can readily access some spectacular ingredients, many of which he has adopted in the many years he has been at the Delta Beauséjour. His 100 Mile Menu, showcased on Food Day Canada, is a true work of culinary art.

Begin with the tangy, sweet tomatoes and herbs from the Windjammer’s rooftop garden, served on locally baked sourdough bread with Belliveau Orchard apple gel and gouda from nearby Armadale Farms. Delicate orecchiette pasta is paired with mouth-watering Shediac lobster and fresh rooftop herbs.

If you’re craving fresh scallops, they are pan seared with local onion broth and served over leek purée with charred leeks. Springbrook Farm pheasant breast is poached in locally foraged mushroom cream, served with a pressed pheasant leg confit, pickled local onion, pheasant crackle and garnished with an edible rooftop nasturtium. If you are looking for true elegance, the dining room is set up for tableside service (I LOVE IT!!) to flambé a perfect beef tenderloin with a classic green peppercorn sauce, traditional crêpes Suzette, or MaD’ Frédéric’s famous Caesar Salad.

And to complete your feast . . . a delicate white chocolate mousse and Belliveau Orchard MacIntosh Apple compote with brown butter and cinnamon crumble.

The Windjammer has become a perennial favourite on many annual “Best of” lists, and has been awarded –annually since 1992 – the CAA Four Diamond Award for excellence in dining.
