Saskatoon Berry Lentil Muffins

  • 1½ cup (375 mL) large green lentils, cooked
  • ½ cup (125 mL) orange juice
  • 2 cups (500 mL) all purpose flour
  • 1 Tbsp (15 mL) baking powder
  • ½ tsp (2 mL) salt
  • ½ tsp (2 mL) cinnamon
  • ½ tsp (2 mL) ground allspice
  • ½ tsp (2 mL) pumpkin pie spice
  • ½ cup (125 mL) honey
  • 1/3 cup (75 mL) canola oil
  • 2 eggs
  • 1¾ (425 mL) cups fresh Saskatoon berries

Preheat oven to 200° C (400° F).

In a blender, combine 1/2cup lentils and 1/4cup orange juice. Purée until smooth.

Sift together flour, baking powder, salt, cinnamon, all spice and pumpkin pie spice.

In a separate bowl, mix together lentil purée, remaining lentils, remaining orange juice, honey, oil, eggs and Saskatoon berries.

Add to dry mixture stirring only until dry ingredients are moistened. Spoon mixture into paper lined muffin cups, filling 3/4 full.

Bake 20 to 25 minutes or until toothpick inserted in centre comes out clean.
